fun latin saladsSalads are delicious, refreshing and healthy. But alternating between chicken Caesar and plain old lettuce, tomato and onion can get a bit boring and repetitive. Variety is the spice of life, and we Latinas are nothing if not spicy. So add a little sabor to your meals by mixing it up every once in a while and trying one of these anything-but-ordinary salads:

  • Aguacate (or Palta) Relleno: mix diced tomato, onion, mayonnaise, salt and pepper in a bowl and refrigerate until ready to serve. Peel avocado, remove pit and slice lengthwise. Fill with mixture and serve. You can also add tuna to the mix and enjoy it as a light and nutritious main dish.
  • A combination of spicy grilled corn, black beans, peppers and queso fresco makes for a zesty and protein-rich salad that’s filling and very Latino!
  • If you’re reluctant to test new waters and prefer to start off slowly, dip your toe by adding a muy caliente vinaigrette to your salad. Mix tequila lime salsa, olive oil, apple cider vinegar and black pepper. Just don’t go sneaking tequila shots while you make the salsa or you may end up forgetting all about the salad altogether.
  • Don’t think fruit salads are off the hook. Your old-school salpicon can be kicked up a notch, too! Cut up and mix mangoes, bananas, pineapple, oranges and star fruit. Add a dash of white rum and top with grated coconut. Saucy!
