Halloween is right around the corner, so it’s time to get your tricks and your treats ready! A saucy chica like you probably has a bag of tricks at the ready at all times, but what about treats? If you feel like springing for something a little more special than store-bought candy for all the Handy Mannys and Dora The Explorers that will be knocking on your door this year, or are simply looking for seasonal snack to bring to a party then look no further. Are you ready for the most delicious recipe you’ve ever heard of (OK, OK, not counting abuela’s tres leches)? Pumpkin chocolate chip cookies – double yum! You are guaranteed to be a hit with whomever you share these little bits of heaven, so break out the spatula and get to baking!

1 cup canned pumpkin
1 cup sugar
½ cup oil or applesauce
1 egg, beaten
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. cinnamon
½ tsp. salt
1 tsp. baking soda
1 tsp. milk
1 tsp. vanilla
1 cup chocolate chips


Combine pumpkin, sugar, oil or applesauce and egg.  In a separate bowl, stir together flour, baking powder, cinnamon and salt.  Add pumpkin mixture to flour mixture; stir well.  Dissolve baking soda in milk; add to dough and mix well.  Stir in remaining ingredients.  Drop by teaspoonfuls onto lightly greased baking sheets.  Bake at 350 degrees for 10-12 minutes to make 2½ dozen scrumptious cookies.
